Do you ever find yourself searching through your pantry/fridge for the perfect little bite to keep you going till your next meal/snack?
Well, friends, I’ve got that little bite covered---and in cute little ball form!
My sweet mommy friend, Jenna, shared this recipe with me a while back and it’s been a family fave ever since. Seriously, my husband has me keep them “in stock” 24/7. He very sweetly lets me know when he’s taking the last ball out of the freezer…which translates to, “Woman, you’d better get to making more.” Haha!
Good thing these are easy-peasy to whip up! They take less than five minutes to mix, thirty to set in the fridge, and another five to roll out.
Boom. Done.
And the best part? They’re super HEALTHY! The perfect mix of healthy fats, complex AND simple carbs, and protein; all of which keep you feeling energized and able to focus…on getting another ball into your mouth. [hehehe]
So, what’s in these puppies? Let’s get to the recipe!
ENERGY BALLS
Prep Time: 40 min (30 min setting in fridge)
Servings: 18-20 ping pong-sized balls
Ingredients
1 cup GF oats (I use the quick cooking kind)
½ cup all natural creamy peanut butter
1/3 cup honey or maple syrup
½ cup ground flax seed
2/3 cup unsweetened shredded coconut flakes
½ cup all natural dark chocolate chips (I like to use raw cacao nibs, too, sometimes)
1 tsp vanilla extract
Instructions
Do a little mixy-mix of everything together (it may take a second to incorporate it all) and then pop into the fridge to chill for about 30 min. Remove and roll into whatever size balls you’d like (my husband says the size of a ping-pong ball is the perfect bite). Store in an airtight container in the fridge or freezer for 2 weeks (if they last that long!).
