I had the idea for these bites when I was about to whip up another batch of my Energy Balls. I thought adding crispy rice cereal would be a great crunch factor, and then changing up the flavors of the PB/honey would only add to the deliciousness. Man, was I right.
What’s even better is that they’re gluten, dairy, and soy-free. You could also make them vegan by using maple syrup instead of the honey. Whatever floats your boat!
NO BAKE CRISPY CHOCOLATE COCONUT BITES

Total Time: 50 min
INGREDIENTS
1 C One Degree Organics Cacao Brown Rice Crisps (Love Grown Comet Crispies would be amazing, too!)
1/2 C ground flax seeds
1/3 C unsweetened shredded coconut
1/2 C Wild Friends Chocolate Coconut PB
1/3 C Bee Keeper Naturals Raw Honey with Cacao
INSTRUTIONS
Mix everything together in a bowl. Scoop out with a small cookie scoop, making sure to press down on the bowl to get the bite pressed together. Place on a parchment-lined baking sheet and pop into the freezer for 45 min. Then take out, place in a freezer-safe container, and munch on ‘em for 2-3 weeks. Guaranteed they won’t last that long though!
