Yep, I did that.
Birthday cake flavored, protein-packed pancakes. With sprinkles, because I'm gangster like that.
I created this recipe for a social media collaboration with Buff Bake, who makes some amaaaazing protein nut butters. I use their spreads in so many ways on a daily basis, so it only made sense to incorporate them into one of my fave breakfast foods: pancakes.
These are perfect for breakfast, snack-time, or a pre/post-workout snack. Okay, so basically they're good anytime of day. And the fact that they're low in sugar (with only 3.5g per pancake) makes me want to eat them for every. single. meal.
Alright, I'm sure you're chomping at the bit wanting the recipe so you can go whip these puppies up yourself. So here ya go!
BIRTHDAY CAKE PROTEIN PANCAKES
Prep Time: 2 minutes
Cook Time: 5 minutes
Total Time: 7 minutes
Servings: 2-4 (makes 4 pancakes in total)
INGREDIENTS
2 whole pasture-raised eggs
2-3 Tbsp coconut flour (adding a little more at a time to get a batter-like consistency)
1/2 tsp low-sodium baking powder
1 medium ripe banana
INSTRUCTIONS
Whisk all ingredients together. (If your banana isn't quite ripe enough, mash it before adding it to the mixture.) Using a measuring cup or ice-cream scoop, pour even amounts into a griddle/pan sprayed with cooking spray. (I used my Dash mini griddle, which I LOVE for recipes like this!) Cook until lightly browned on both sides and "set" in the middle.
Top your 'cakes with more Buff Bake, sprinkles, fruit, cookies, candles, or whatever floats your boat. Then ENJOY, friends!
